I need some HALP!!!!!!!!
The strawberry cupcakes that I am making from scratch are FABULOUS! They literally melt in your mouth, they are so light and fluffy! Because they are from scratch, the strawberry flavor is pretty delicate.
So, I want a likewise subtly flavored lemon frosting to go on top of them.
Any ideas?
I've been toying with the idea of cream cheese lemon frosting. But... I don't want it to be an overwhelming cream cheese flavor. That's for the spice cake minis. ;)

I've always left out the lemon rind because John doesn't like zest.
I can't remember making lemon frosting, but the recipe Jenny suggests looks good. I like lemon zest because it adds a good taste of lemon.
I'm no help, but I do like zest.
Oh, and when you've figured it out will you post recipes, please?
Here's one that my friend makes. I tried it and it turned out really yummy. Not sure if it will be too much but there's only one way to find out!
2 3oz packages of softened cream cheese
1/2 cup softened butter
2 tsp lemon juice
beat on low until light and fluffy. Gradually add 4 cups powdered sugar. Add more if necessary until desired spreading consistancy is achieved. Stir in 1 tsp lemon zest.
