baking cakes from scratch is the worst idea ever and i am never doing it again


So what should I do with 2-3 cups of leftover lemon custard?

Frankly, my dear... I'd toss it.
Or you could make scones and use it with those. Or turnovers using store-refrigerated pastry dough.
